Halo-Halo


When Steven brought me this drink back from his walk into town, I didn't know what to think. But little did I know, this interesting little drink became one of our new Filipino favorites on our trip. A mix of slushy, fruity, coconut goodness. Here is how the Filippinos make the dessert Halo-Halo.

First, they take the ice from the cooler. The ice is covered with the discarded shells of the rice seed to keep it insulated from the heat.

There are an array of ingredients that can vary per recipe, but this one had fresh fruit, tapioca pearls, nuts, jello, and 4 heaping spoonfuls of good ole' sugar!

Then she rinses a block of ice and manually shaves it into the cup.

Its topped off with young coconut shavings, coconut milk, and a dollop of berry ice cream - delish!
